Meatloaf

It's been a funny week y’all. Life around here is starting to change with my actual wedding being planned and happening in just a few weeks. Obviously, I'd take on catering it, and yes Alex is gonna make the cake! He's the baker and can't cook anything except the best Korean food and I can't bake anything except pie crust.

With food truck plans coming along quickly we've been in a routine with dinner and my dad came up with making some meatloaf and mashed potatoes.

The way I make meatloaf is honestly pretty similar to making meatballs. I made this one with 2 pounds of lean ground beef like a 93/7 blend. You need to add the egg, 1 cup milk and breadcrumbs before mixing so the bread can soak up the milk. I added onion Carrot Celery and garlic to a pan to sweat while I got the rest of the seasonings together. Season with whatever makes your heart happy, I used country bobs, turmeric, oregano, Italian seasoning, and salt and pepper. For the sauce on top mix ketchup or BBQ sauce with mustard and brown sugar.  Mix everything together well and put in a loaf pan add sauce to the top and cook at 350 for at least an hour or until the center is no longer pink.
