Quesadillas

In my house we love all Tex Mex food whether its fajitas, nachos, or quesadillas. The meaty cheesy delicious tortilla concoctions make my heart happy. I haven’t told yall about the many places I’ve lived over the years, but Texas was by far one of my favorites, the friends made as a child playing in the pool and eating what was cooked on the grill are some of the best memorizes, I have.

My mom and I lived in at least 12 different states as I was growing up because she was a single parent traveling nurse. My mom and the man I call my dad met while she was on her last assignment in Colorado. Once we finally settled in Virginia as I was finishing up high school, she stopped moving states while I got the travel bug. I’ve lived in or been to all but 14 states, and I’ve been saving for an RV so that I can see the rest of the states and the continent.

My favorite Tex Mex food is quesadillas, and we had them for dinner this week. I make the Taco Bell sauce to put on mine personally but the rest of the isn’t as much of a fan as I am so I’m the only one to use it. I use the copy-cat recipe from this website. (https://keytomylime.com/copycat-taco-bell-quesadilla-sauce/) This one is freaking close. The reason my family loves quesadilla night is because they can put whatever they want in it if it fits. My husband makes his with extra cheese, dad does peppers and onions, but mom wants the salsa and sour cream on the side with all the veggies meat and extra cheese inside. My philosophy is as long as it cooks let’s do it. My favorite quesadilla is steak with onion peppers and the sauce I was telling you about. Put in a huge flour tortilla and cook on the griddle until golden brown and delicious on both sides. While those are cooking, I make a pico de gillo with tomatoes half onion you didn’t use in the quesadillas minced jalapenos garlic lime juice and cilantro. I add about a half cup of pico to 3 avocados to make guacamole. All that’s left to do is enjoy!
