Sweet and Sour Wings

I’m late… sorry! No judgement please it’s been a crazy week that kinda started pretty wild with very busy days at work and ended in DC. It started when I bent down to fix my tights walking into work and my spin let out this ode to my age that had me limping though the busiest weekend since January. I’m a server at a casino near my house and the fight this weekend had us way busier than we had been in months. Lots of really good money but in an already hurting body it was overwhelming at best. This bough me a three day weekend which the first day meant lots of sleep and rest. Then my amazing husband surprised me with a trip to DC. It’s only a few hours from where I live and one of our favorite get aways. We checked out some awesome food truck sites and went to the Smithsonian, and I got legit the best parking spot that I learned as we sped away when someone let me out to take our spot that it was a handicap spot. Thankfully no ticket but I learned to check parking meters. ON the way home we hit up Sam’s Club because your girl got the house to ourselves. My parents left for the weekend. Yes, my husband and I live with my parents, its another story for another time. Ok well long story short my dad had a stroke and I moved home to help. Anyways, helping my mom get ready to leave for a week took the rest of the evening and I didn’t have time to write a blog.

Since this week the sugar filled and fancy free, I’m giving you’re the just made up 20 minutes ago sweet and sour baked wings. I broke down my wings meaning I bought the whole wing and cut them into three parts. The very end I save for stock since they don’t have a lot of meat. The rest I put in a casserole dish with pineapple juice lime juice and sweet and sour mix you buy for your drinks. They’re gonna marinate all day and through them in the oven at 400 for about 30 minutes or until golden brown and 165 degrees in the fastest part. Bonus points if you throw them in a deep fryer or air fryer for like 5 minutes to crisp up and toss in your favorite sauce.
