Hey guys, it’s been a while, sorry! The pasta dough video took a lot longer to edit than we thought. Shout out to the AV guy Alex!!! This is the bonus blog about carbonara sauce for the pasta dough how to video. If you don’t have time, space, or brain power to make the pasta dough don’t worry, you can use any pasta you want to.
The first time I heard of it was on the Rachel Ray show. Since I’ve learned to make it, I’m going to show all the tips and tricks. My real-world experience is Pete made carbonara for Mangia Monday at Mercato one time. All the pasta was homemade, so I had a close relationship with making the dough. Now he had special ingredients, but I showed him a simple delicious recipe.

Pancetta is the bacon part that gets diced up and rendered meaning to cook low and slow to caramelize the meat and not burn it. The eggs come from the egg yolk that thickens the sauce that’s made from bacon drippings and starchy pasta water. Be careful while whisking the egg yolks in or you’ll curdle them. It’s sort of like a custard in that way. When you start rendering down your pancetta is when you want to start cooking your store-bought pasta. If you make the dough pasta you won’t be cooking your pasta for a few more minutes. Remember that once you cut your pasta let it dry for like 30 minutes or until it feels like leather.
Pasta and its sauce are a labor of love that will absolutely be healthy, more loving to your body, and a great way to get out some aggression.
