Yall it's been a crazy few weeks, so much so that I haven't been cooking like at all. Until yesterday I don't think I had seen my parents except in passing for at least a week. I have been working 6 days a week for the last few weeks and probably will be for at least the next for the next month. I think this week I'm just going to share what’s happening in my life so y'all don't think I abandoned my blog, and the cake my amazing husband made for me.
I've been working 5 to 6 days a week bartending which has been the joy of my life. I don't think y'all realize how long it took for my bosses to take me seriously. I started talking to Pete back at Mercato to remind me of the things I was taught in culinary school about bartending. When I was in the class, it's the first time I actually had any education about how alcohol is distilled and the process of actually quality liquor to make amazing drinks. Along with the history and how to make signature drinks. This is where the love of distilling and bartending took root. It took probably 13 years and the will to not give up on my dreams. That goes to all of you, when you set your mind to something NEVER BACK DOWN. Tell them with your whole chest and stand in their faces until they do what it you need your bosses to do.
I'll try not to stand on my soap box, but I get fired up when people aren't treated fairly or looked down on because the bosses don't think we're not capable. Anyways about that beautiful cake I was telling y'all about. I only was in the kitchen to help make the batter. It was a devil’s food cake with raspberry and strawberry in the cake and pureed to put between the layers. Then he made a cream cheese and chocolate frosting. It was to die for; super moist and flavors were out of this world.
First, we mixed up the batter. I'm simple so we just used the store cake batter. He wanted to make it from scratch, but I wanted the box. Then I diced some raspberries and strawberries preheated the oven while he read the box and got everything measured out. Then the best part is he let mix the batter. I say it was the best part because I don't bake so I'm uncomfortable with making batters and doughs because most of the time I don't do well. Which is what happened here, I didn't get to the bottom of the bowl, so Alex had to remix the second half of the batter. He said not to worry about it, but we did end up putting that particular cake on the bottom. Anyways we added the diced fruit and baked it i think it was 350 for like 30 mins but always read the instructions. While it was baking, I took a nap, and Alex made the icing and assembled it.
My advice, get you can that's part baker, best listener, most understanding when you never come home on time, and is your best friend. I love that crazy man more than I have words for.
