If there's anything my dad hates, its leftovers, however I do my best to get away with not doing anything with them. This week's recipe is a good comprise for both sides of the spectrum. We had some leftover pulled pork so I decided to make Cuban sandwiches for the family.

A little back story on the Cuban sandwich originates in Florida about 500 years ago when immigrants started to move to the area. In the original versions of the sandwich, it had fish and birds and other meats from the area but when Europeans came to the party they brought pork which is what we use today.

I’m running late to start getting ready for work so I’m finishing with the recipe. IF you have already cooked pulled pork that’s the best if not go t the grocery store and buy it from the packaged meat section, and it’s the same place you get the ham and swiss cheese you’ll need. I use Italian bread that need to be sliced in half long ways and smothered in mustard I like regular and multi grain personally but use what you have. Then add pickles ham swiss and pulled pork and use a griddle to warm the bread and insides.
