Latin American Night

So recently I moved to mornings which is evil in craniate for a night owl like me, but it gives me more time during the week with my husband. So, I'll just take one for the team; however, I keep waking up when he leaves for work at 5am instead of 7am when my alarm goes off. I figured today I'd take the time to write instead of getting lost in TikTok for unknown amounts of time. Also, kitty says hi in annoyance as she tried to chew on my phone.

In my family we love Taco night. It's my husband's favorite meal. My dad must have the stand and stuff Taco shells and literally every time he sees them, we must hear about the amazing commercial from a few years back with the younger girl telling her family they can fit more in the tacos if they are standing up, and no matter how many times we hear it we all laugh.

When I worked as the lunch lady in a private school our Taco Tuesdays or Latin American day there was always some kind of rice and beans for Taco Day we used ground turkey, which my husband doesn't know I switched him to a few months ago. Neither the kids nor my husband could tell the difference if the seasoning is correct. For Latin America we used to have what's called Chicken Tinga, which is roasted chicken with tomatoes then served as a Taco. I remember one day when one of my little helpers from 2nd grade came in to lunch and told me I made the best Tacos in the whole earth. I'm sure that's not true but it did give me an amazing dopamine rush!

In honor of Latin American day, this is my chicken with rice and beans recipe. You’re going to need 2lbs chicken thighs, 1 cup soy sauce 1/2 cup marsala wine 1T sugar free syrup 2 cups chicken broth/stock/water 1 onion 3 cloves garlic 1 bell pepper 4 tablespoons of cumin, paprika, chili pepper, and oregano 1 can black beans 2 bags boil in a bag brown rice and 2 cups salsa.

All you do for this one is sear off the chicken meaning brown on both sides in a Dutch oven on medium high heat. Once they’re done, cut up your onion pepper and garlic and caramelize with some salt, pepper, and half of your spices. Then add your marsala wine and soy sauce. Once that mixture is reduced by half add your syrup and chicken broth. Add your chicken back in and cook on low or in the oven until fork tender. If you got bone in chicken thighs, you’re going to want to take out your bones. While the chicken is cooking boil the rice and mix with the rest of the salsa and heat the black beans with the rest of the spices. Add your favorite tortillas and toppings like sour cream, cheese, lettuce, and more salsa/guacamole and enjoy.
