Layered Enchiladas

Tonight's dinner is like enchiladas meets lasagna. Mom says it's amazing so we're gonna try to make it happen. So my husband and I went to the store to get all the ingredients for dinner. One of the things we needed was Parsley. I go to look for it and found Cilantro where the Parsley was supposed to be. I don't know about you but to me those flavors are completely different and I'd be pretty passed if I didn't know what I was looking for when I went to the store. So today's rule is read labels on your food. It really does make a difference.

 

Here's today's recipe your gonna need homemade noodles (which will be in a blog post to come since I'm still working out the recipe before I bring it to yall) about 3 cut in half; a tablespoon of garlic powder, cumin, chili powder, and salt; a bunch of parsley; 2 cups of ricotta; 2 and a half cups of Colby jack cheese; 2 pounds of chicken (i like the chicken breast tenders); 1 can red Enchilada sauce and a can of green chili Enchilada sauce. First but you're going to want to do is roll out your lasagna noodles in your pasta maker (I have one of the old-school ones that has the hand crank) or you can use whole wheat noodles. They're gonna need to boil about 10 mins while your oven is preheating to 375. Mix the spices and salt together, half is gonna go on your chicken and half is gonna go into your ricotta mixture.

Spinkle the spice mix on your chicken and cook with 2 tablespoons of veggie oil on medium high heat about 5 mins each side. Let cool a few minutes and shread the meat. When that's done get a big bowl to mix your Parsley ricotta Colby jack cheese and spice mix together until completely incorporated. Now we're ready to build, spray your pan with any pan spray you have then pour a little of each of the Enchilada sauce on the bottom of the pan laughed first cut in half noodle or 4 regular noodles spoon in half the ricotta mix and half the chicken on top of that with a little more of your Enchilada sauce.  Do that process again and then put the last of your noodles and Enchilada sauce on the top with cheddar cheese. Put on the oven for 25-30 mins. Since it's all cooked your just wanting the cheese to bubble and everything to get warm.

 

 There's a big debate in my house of how to pronounce ricotta mostly be abuse I worked for an Italian chef named Pete who's restaurant was in the middle of the Bible belt that had a pet peeve about pronouncing his Italian products with that southern twang that we all had. He said think of the co in ricotta as to cousins that only talk to each other at family events. The c is pronounced more than the o in Italian words like that.
