So, I did the scary thing last week and if you ask Alex, it was an Oscar-winning performance. If you look closely at the website, you can see what’s changing, but because I have got to spill the beans, I’ll tell you. I made my first cooking video this week. It was awkward and I think it’s going to need mounds of editing before I can let anyone else see it.
I took the advice from the girls at work and ran with it. I already had most of the equipment needed to pull this off but no idea I sounded so goofy. I’m going to work on that. Last week was a test run that might not come out. I’m not sure. Were filming with a sort of script today so this one might make it somewhere.
The reason it came up is last Thursday Alex decided he wanted some chicken noodle soup, but I wasn’t feeling it. I offered to make dinner; I wanted to use some of the leftover vegetables in the refrigerator. Pete was the first person that taught me how to properly stuff a chicken breast. He told me to cut a pocket into the fattest side far enough in that you can make the pocket bigger with your finger if needed. Then later when the menu changed, Hannie showed me how to roulade a chicken breast. Which is what this receipt is more of. A roulade is made when you pound out the meat into a thin layer that will be filled and rolled into a sphere for cooking. This beautiful man I married is so excited about me starting these videos so he can learn to help me in the kitchen. That makes me so happy, because it’s something we enjoy doing together. I’m just terrified he’s going to hurt himself and honestly sometimes that and my commute to work is the only time I get alone.
Side note were putting him on my insurance at the casino for next year so we can take his medical records to a regular doctor to get some answers. He’s getting progressively worse, and you know the issue we’ve had with the VA here. If we were in Louisville, he would have been in to see all the specialists he needed and would have had surgery when all this first started not a year later waiting.
Well, I guess at some point yall are going to see this in real life but here we go. Preheat your oven to 350. Then grab your chicken and pound it out. Add your seasoning and set aside to get the rest of your ingredients together. Gather whatever stuffing that you want to use (I used bacon provolone onion slices and green bell peppers) to the fattest side of the chicken and roll it. I used toothpicks because that’s what I had on hand. You should be using kitchen twine and tying the chicken at each end. I also used chicken thigh instead of breast because it’s heaper and carries flavors better. Make your sides when the chicken is almost done and enjoy.
