Crunchwraps

   While I was off this week my husband asked if I'd make some tacos, but we made crunchwraps like you buy at taco bell. Let's talk about it.

   I can't lie today, hurt my feelings, Alex had his doctor’s appointment for his back and it was the most unprofessional thing I've experienced in Virginia. We walked in and the physician assistant was there because his actual doctor is based in another state. She went through a battery of things that we already knew were problems before we had to stop her and ask why we were not talking about his back issues. This girl spent the next 20 minutes trying to print the paperwork so she could read through it to give us no answer and make a man that's obviously in pain in more pain. She didn't have an answer for us, so we promptly left before Alex's high blood pressure went to the moon. We're getting better insurance in January so we can get him the doctor he needs and get him back to himself again.

    I love that man more than anything else, but he's a shell of the man I met and fell in love with since we moved to Virginia to help my parents. He's got bad doctors, can't find work (even though he should be on disability), and my parents aren't the easiest people to live with as grown adults or when I was growing up. I'm making as much money as I can to get us an RV and move out of this state.

   On a fun note we went to see Brad Williams at the Harrison Opera House and it was fantastic. They did a fantastic job renovating it. It's been around since the Civil War I think, and they did a full restoration. Brad was hilarious and we had a blast. The bad thing is I took my wedding ring off and left them. All that money down the drain and I'm sick about it (object permanence), so I was rushing and forgot them. I feel like I'm the worst wife ever. He hasn't forgiven me this one yet. Please tell me one of yall have done something like this? Or if you found two rings in the lady’s room and your reading this please send them back for my own sanity.

   Thank you for being a safe place to take a second to tell my feelings. I don't think I’m trying to have feelings about Alex's health issues is rude and I don't want to burden him with more. Anyway, let's get to the recipe before I start crying at work. Crap don't tell on me. We got the 12in tortillas, some tostadas, and queso on top of the normal taco things. I feel like I've done a taco night blog but if I haven't, we do; ground beef, lots of taco seasoning, sour cream, cheese, onion, tomato, salsa, and Alex likes olives. I cooked the ground beef until it was browned and threw in the taco seasoning. I always put extra cumin chili powder and paprika in because Alex likes tacos with extra seasoning. We saw the box for the DIY cruchwraps at the store and took a picture of how to wrap them. The easiest way I could tell you is build the wrap in the middle of the 12 in tortilla. Taco meat probably a 1/2 cup then add queso to the tostada, place it down on the meat queso side down then put a dollop of sour cream on the other side. Next add shredder lettuce tomato onion and wrap it. We cut one of the tortillas into 8 and put it directly in the middle of the stack and started folding little pleats into the tortilla as you fold the ends into the middle stack. Once it's all folded clean your skillet and heat to like medium high heat add pan spray and toast your wrap on both sides about 3 mins or until it sticks together. I added another frying pan on top for weight to make a better stick and crunch on the outside.
