Tuscan Chicken

This week I'm gonna tell you how I messed up this recipe the first time and how to fix it to make yours's better.

 My mom got her insulin pump from her fancy doctor people and the first few days were a bit on the wonky side since she's now getting.a continuous dose if insulin and she got fussed at for not taking better care of her diet which is par for the course. It's super frustrating knowing that if she would have done this when they first told her years ago she wouldn't be where she is now. However I made her a meal that I had heard of before but hadn't tried yet. I put it in the crock pot instead of on the stove or even in the oven. The flavors never concentrated enough to make it as creamy and delicious as I wanted it to be; however my mishap is your gain.

 So if your cooking this for yourself, start by heating pan to medium heat add olive oil and butter season your chicken with seasoning salt and Italian seasoning and brown on both sides. Cut half an onion into small dice and sauté add a pinch of salt and pepper to help render them. Add either a half cup of white wine or white wine vinegar to deglaze the pan mean scrape the stuck bits off the bottom of the pan. Add 2 handfuls of spinach, sun dried tomatoes, a handful of parm, and 2 cups of heavy cream. Bring to boil and reduce the heat to simmering. Add the chicken back into the pan cover and cook until the chicken is done and the sauce is nappe or coats the back of a spoon without running. Add another sprinkle of parm, and I served mine with some bread but you could serve with noodles or potatoes. Get creative!
