Chili

I love Fall not for the reason that all the normal girls love fall. This time of year is especially my favorite because it’s the start of football season. I spent my high school Friday nights at the football field, and Saturday and Sunday glued to the tv watching my team hopefully winning. So naturally making snacks and chili over the course of the weekend is just a no brainer. Chili is one of the staples in my house we have it at least every other weekend during the colder months. Something about a blanket with a bowl of hot stew like dinner that can cook all day in the crock pot makes my stomach jump for joy.

This pot of chili specifically was proof I’m the best cook I know. Now I’m not trying to be cocky but its just a fact of doing something I love for so long that I can’t help but being amazing at what you do. One of my adorable coworkers decided to challenge me to see who the better cook was. We brought our samples to work to have the girls and our manager to try and the untying vote said that I won the mini casino chili cook off. Honestly if she had just seasoned every level of her chili we would have officially tied. I’m not a gatekeeper so here’s my secret to making awesome chili.

Obviously, this is just a roadmap, please take the advise and run with it. Brown your ground meat, you can use beef turkey or chicken and add to the crockpot. When I say brown what I mean is you want to use medium to high heat and cook until it’s a medium brown similar to a coffee with 3 creamers. Cut up and cook you peppers and onions in the same pan and add salt pepper chili powder cumin and seasoning salt on top of the veggies and sauté until caramelized and add to the crockpot. The salt lets out the juices and helps the cooking process. Then add all the beans and tomatoes to the pot, put them on low and cook until hot and you’re ready to eat. I use kidney, black and chili beans and fire roasted tomatoes out of the can. I normally put it on in the morning and let it cook until dinner to give the flavors to marry and get delicious.
