Omelets

My family loves omelet day. They pick from all their favorite veggies and meats to pile in as many toppings as they can to the pan. Which I happily do for them, but it reminds me of a time working in the galley on a cruise boat on Sunday brunch working the omelet station. This normally followed a night shift that saw me getting home at 3am and getting a few hours of sleep before having family time before work. I would come on board just before passenger boarding so I could be sure my station was all set. I had backups in the ice box around the corner. 385 passengers during a 3-hour cruise all want these delicious egg and cheese filled breakfast creations, all wanting the same thing as my family does ingredients piled high in the pan. The issue is on the boat the time constraints as well as food cost were fighting against us every time.

  With the family we use the same ingredients in many other salads and dishes that are all my ingredients and normally already in the refrigerator. So it’s pretty easy to just dice up everything and make an omelet or two in about 20 minutes.

The way I cook my omelets is simple. You cut up everything you want to use, in my house its mushrooms, onions, bell peppers, spinach, ham, and tomatoes. Then heat your pan with oil on medium heat and add a small of all the ingredients in pan and sauté until they are tender. Probably about 3 minutes then scramble in a small bowl and pour into the pan and add salt and pepper. Turn the burner to low and cook for 4 minutes. Using a rubber spatula lift the cooked part of the eggs to reveal the uncooked egg then lower the cooked egg to add layers to your omelet. Once you do this a few times cover the pan to steam the top of the omelet and find your cheese. After the omelet is cooked add cheese and slide onto a plate and fold in half to make it look like you’re at a fancy restaurant and enjoy with your favorite salsa and sour cream if that’s what you like.
