Sushi

 My husband asked me to get the stuff to make nonlethal sushi. He's allergic to shellfish and is nervous around fish in general. So come along while I teach you what I know about sushi and all the ways it can be made.

  A quick Google search says sushi originated in China and became a Japanese staple in the 1800s by Hanaya Yohei of Edo, in Tokyo, Japan. The traditional vinegar-soaked rice served with fresh fish is still how it's served today. I first learned how to make sushi at Simply Thai. This amazing Thai restaurant in Louisville. Not an add, Jeff and Kelly were amazing to me, and Jeff taught me so much about Asian cuisine and being a Zen human. About a year after I started working there, I started slowly learning how to make sushi. At first, I was terrible at it, they would fall apart and be square. Eventually I got better at it and started picking up speed. The one I'll never miss is the prep for that station was like laundry, it's never-ending.

  For this one you need to stop by your neighborhood Asian store for the rice and fish if you’re using it, as well as the rolling mat and nori. Other than that, have fun with it and create your own. Here's what we're doing though. First cook the rice, you need to rinse the rice until the water runs clear and the true Asian trick is to only put enough water in that when you measure it the water comes up to your first knuckle. That somehow is exactly 2 to 1 ration for the rice. Then when it's cooked put in your rice wine vinegar and sugar water mixture into the rice. Then grab your nori and spread out a thin layer of rice on one side. Flip it over and add your ingredients, we used thinly sliced cucumber and avocado. Then we marinated chicken thighs in soy sauce and Korean chili powder and roasted them until tender then sliced them into one-inch pieces to be rolled into the sushi. I topped ours with crispy onions I got at the Asian store and spicy mayo and eel sauce just on mine.

  It's been a week of sass for and for the life of me I can't tell you why. Unless it's almost shark week. Work was stressful and I didn't do as much as I needed to. I don't like to talk about my issues because of my caretaker’s heart but I'm getting burnt out and I'm in desperate need of a break. This of course has nothing to do with this week's blog I just feel like I can bare my soul here and we'll I hope you can do the same.
