Today I made a super quick dinner as my boss called me into work. Stuffed peppers are a pretty delicious quick meal that really doesn't get the credit it deserves, and I'm going to tell you why and how to fix it.
There's some bug going around that's got all the girls at work sick, so they called me in on my day off. Luckily, I had gotten a clean bill of health from the doctor earlier today. As I was starting my work clothes washing, I put the peppers in the oven so everyone else could eat dinner.
My first experience with mass production stuffed peppers was at the private school I worked for. Cases of peppers were cut in half deseeded and partially baked in the oven to become tender. I stuffed them with ground beef, leftover or minute rice, and marinara sauce then topped with mozzarella cheese. They normally cooked until the cheese was bubbly since everything was already precooked.
I think most people have a issue with the outside pepper getting done which is why it's such an underrated dinner. It's packed with simple delicious ingredients that can be made into magnificent, tasty quick dinner.
