I've been on a limited menu for the last few weeks due to alot of dental work being done, but I have been dreaming about the meal I'll have when it's all over. My favorite thing to cook a medium rare ribeye with stuffed smashed potatoes and asparagus.
My first solo dinner party as a personal chef was probably the most terrifying thing ive probably ever done but it was the night I made the most money aside from the job I'm at. It was a group of friends having a pj Christmas party. I had to not only ask for the night off work but I bought most of my prep from them. They wanted a surf and turf with ribeye and spider crab garlic smashed potatoes and asparagus. The night started by unloading the car at this ordinary looking house but when I walked in it had cozy cottage vibes as you walk in and see the front is deceiving and the house is huge. Their dinner started with a house salad with ranch dressing. Then wine and cheese board which I put both together while the potatoes cooked (add a few cloves of garlic and 2 tablespoons of salt on the potatoes as they cook) and blanched asparagus as to not char on the grill when finishing the cooking process. Then I grill the steak and fried the crab added a quick lemon cream sauce that broke. You can see it in the picture I still have.
Well wish me luck as I go to my 2nd to last dentist appointment in a few hours and I hope it all paus off in the end with better teeth. I never really took care of them or really rest of me either. That's my new years resolutions to be kinder to myself which in turn means taking care of health I guess. Insert eye roll here!
