Christmas Apples

 I hope everyone had a freaking great day... Merry Christmas friends! I had an amazing day. I missed a few moments I didn't want to and still somehow think it was the best Christmas in years!

 I got home from work to get a few hours of sleep before going to see my best kid open presents! I avoided my first married fight, didn't have to cook and still got everything I wanted for Christmas!

 I knew my husband wasn't feeling good as soon as I walked in the door last night and wasn't going to make it in the morning and instead of getting upset missing the moment I simply went alone while he rested and didn’t react out of anger in my sleepy moments. I missed going to my brothers with my parents but that meant I didn't have to cook Christmas dinner, so I was sad but grateful at the same time. I'll look at pictures in the morning and mom will tell me all about it. I took a deep needed nap before opening presents with my husband and parents. Then napped for most of the rest of the day. Normally I'm up before anyone cooking all day and needing 3 days to recover from Thanksgiving and Christmas.

 Speaking of Christmas past that takes me to probably my favorite gift of the year sorry not sorry baby! My aunt sent me a recipe box full of stuff she made for me as a child and stuff my grandpa would make, and she put her apple recipe in it that almost made me weep! Aunt Sherry’s apples are legendary in some circles. She's kept it locked in fort Knox and it’s almost as hard to get a batch than getting Moonshine in a dry state. I once drove 5 hours out of the way to get my hands on them. She only pulled out for special occasions. We'd have them for holidays and my birthday... I didn't ask her if I could share this! When I found out how easy it is I'd had to share it so yall can get your kids to eat apples.

 Aunt Sherry has been there through everything for me and sometimes more of a mom to me. Than my own mom was. We share a special bond and I wanted to honor her by sharing my favorite thing she makes.

  We're using granny Smith and I've got 5 big apples. You need to peel, core and chop your apples I use the push apple corer that cuts it into 6 pieces and I cut those in half short ways. Add your apples to your Dutch oven and add enough water to coat the bottom of your pan 2 hand fulls of sugar and a handful of red hot candies. It's gonna weird but trust the process. If you want to use a candy thermometer you can but your more looking for the texture of the apples than the candy melting. The sauce comes together when it's ready. Tasting the apple for texture will also tell you if it's sweet or cinnamon enough for your taste buds. Once your apple are done enjoy or freeze for up to a year.
