Chicken Shawarma

I was really wanting some Greek food that my family would actually eat that isn't tacos, but I made mine into a taco and salad situation and I got a cool story for this week too!

 Quick back story shawarma is a middle eastern street food normally with warm spices and grilled. It can be any protein you want. I like mine in pita with tzatziki sauce lettuce tomato and feta.

 Living in Louisville I worked for a catering company called Icehouse which was really awesome, and I made some amazing connections and friends. One of the first event that I worked on with them was a shawarma tower action station meaning the chef shaved chicken off the spick just like they would in Greece. The event was a food expo that had amazing ice sculptures and fancy stone crabs that I shucked for hours. It was super hard work, but they were the sweetest buttery silky tasting crab I’ve ever tasted. One of the chefs made a toum sauce that was absolutely perfect. Toum is a Lebanese garlic sauce that take a lot of care and patience to make. The event went off without a hitch and I came back every other weekend and learned a lot along the way.

 I'm using chicken thighs, but this can be used on any meat you want. Grab a bowl and a teaspoon each of cinnamon nutmeg turmeric oregano garlic powder all spice rosemary lemon juice and drizzle some olive oil in bag close and shake to coat the chicken. I leave it in the refrigerator for like 3 hours. I use my cast iron pan to sear off and cook but the best cooking method is a grill. The orzo salad is made with some tomato’s cucumber feta lemon vinegarette. The dressing is just olive oil lemon juice oregano and multigrain mustard garlic clove minced and salt pepper to taste. I believe I've already shared my tzatziki sauce recipe but if not it's Greek yogurt cucumber Dill lemon zest and garlic. Grab a nan or pita and enjoy.
