Nachos

Nachoes are my jam. I love all the toppings and the piling chips up underneath. This might be the only time that my weird texture aversion doesn’t bother me.

The most memorable nacho story I have is my mom. We lived I Colorado at the time and it was a few days before the Christmas play at church. My mom had worked all night the night before and we had to pick up the girl I was babysitting after choir practice, so we stopped for dinner before mom went to bed. We all shared the biggest nacho pile I’ve ever seen. It had chicken, steak, cheese sauce, salsa, etc. The thing that made it so memorable was what happened after my mom went to bed. She wakes up about an hour later talking about some “Brittney has to go home because she allergic to the carpet.” Needless to say, I spent most of that Friday night reassuring her that Brittney was fine; however, we joke her endlessly still to this day because this was just the first of many nights of a tired mom Mexican food and strange dreams.

When it’s safe to eat nachos without nightmares. I like to make my own chips from old tortillas and pop them in the air fryer for 5 minutes at a time and there a perfectly crispy. Then I get the block of white cheese (I can’t say its name for copywrite reasons but if you know you know) and add diced tomatoes with the jalapenos inside. Put that in the microwave for like 2 minutes with like a cup of milk to make it not sez up on you. Then from there it’s personal choice as to what you want in your nachos but I’ll tell you what my family likes. I normally make up some ground beef, tomatoes, onions, sour cream, salsa. I like lettuce on mine and Alex likes green olives on his tacos and nachos. I think next time in going to try fajita nachos like at my favorite Mexican joint over in Norfolk.
