Fried Quesadilla Nachos

   I saw this on my Instagram reel and had to try it, but I'm going to make it a bit different. I love sauce and chicken or steak in my quesadilla, so I'm going to add some protein to mine and a chipotle and jalapeno sour cream before I cut it into chip pieces and deep fry it. Let me show you how I did it.

  It's been a stressful an amazing week in my life so i wanted something luxurious for a dinner. I told all at the end of the past blog that I passed my bartender test, so in a matter of my days off I did the HR paperwork and did my last my last shift as a server while trying to find room in an already made schedule. I’m what we call a service bar for the next few weeks. I've been doing that for a year now, so I know what to expect. I'll get a much smaller paycheck, so my amazing mom is going to help until I get tips from working in a regular bar you would walk up to. We have a crazy history. If you've ever met my mom, you already know. Side note always tip your bartender; we work for tips. With all that stress I wanted to be in the kitchen, that's where I do my best thinking and reflecting because the kitchen is my safe place.

  Now this recipe is a bit out in left field but go take the journey with me, I promise the taste will make any doubts disappear. Now unfortunately I didn't take any pictures this time, but I'm happy to walk y'all through it. I made the quesadilla first and melted the cheese together with the protein of your choice and a sour cream sauce that you make with either taco seasoning or the Adobo sauce in the canned chipotle peppers they sell at Walmart, and pickled diced jalapeños. You can either use a skillet or the microwave to melt it. Once the cheese is melted and the quesadilla is cool enough to handle, cut it into the pattern you want your chips to be. If you want regular size chips use the burrito size tortillas and cut a four-inch diameter circle in the middle and cut like a pizza. Once that's finished either deep fry, or air fry until golden brown and delicious approximately 5 minutes. After that there's a few options you have. I made queso cheese sauce, but you can buy it and heat it up. My queso is canned fire roasted red peppers Pickled diced jalapeno heavy cream and pepper jack and Colby jack cheese. Then where you go from the is up to you. I personally went with lettuce, sour cream, corn and tomato salsa, guacamole, and a dollop of sour cream on top. It was a masterpiece, and the cheese pull on the baby quesadilla was magical. Pro tip if your chips and queso aren't warm when you make the nachos you’re going to have glue basically. Add the baby dillas to the frier for 45 seconds. Add 2 tbs of heavy cream to the queso and warm until incorporated and spreadable.
