Enchiladas Ideas

This is going to be a little out there and it doesn’t even have a name. I wanted some enchiladas, but I didn’t want traditional ones. I’ve been craving spinach and artichoke dip but the way I normally make it with rice and beans was way too much heavy foods all in one. So, my theory is that if I exchanged the beans inside the enchilada with spinach and artichokes and still use all the spices and sauce like the original then I think it’ll be delicious.

Note I haven’t made this yet, and I’m just thinking out loud. While I was having this brainstorm, I googled it, and it looks possible. They put parm and spinach in diabetic enchiladas, so I think you should be able to add artichokes to the mix. One of my favorite concepts of cooking is that you can interchange ingredients and spices to make food the way you want it; that’s why when I’m writing these down, I tell yall to use what you have or what you. For example, you could make it completely vegetarian and wrap them in an eggplant by cutting in long ways down the middle into this vegetable wrap.

Here's the game plan, I’m grabbing a rotisserie chicken, street taco tortillas, salsa verde, enchilada sauce, spinach, canned artichoke hearts, cumin, garlic, onion, red bell peppers, parm in the spaghetti isle, mozzarella. First preheat bertha the oven to 350. Shread your chicken and cut up your vegetables into a small dice; again, use the vegetables and stuffing inside your enchiladas. Also, pro tip if you sauté down your vegetables it will enhance the flavor of the filling. I cook down the garlic onion pepper in some cumin and chili powder before adding the spinach and artichokes to the pan and deglaze with some vinegar add chicken and let it cool before rolling them. Once cooled add parm, wrap in tortillas. and add to a greased pan fold side down so they don’t spill. Add enchilada salsa verde sauce and mozzarella cover and bake for 20 minutes and uncovered for like 5 more minutes or until the cheese has browned.
