It's been a stressful week for my family and an out-of-town trip that wasn't planned, so getting back into the work flow this morning reminded me I hadn't made a blog and since i don't have much time before work I'm going to tell yall about my take on lettuce wraps and the first time I made them.
When I worked at Simply Thai, they had a lettuce wrap that was absolutely amazing made with ground pork and curry paste. Well at least they were amazing until my first batch legit took me all day to finish because it’s supposed to simmer and rest before packaging to wait for someone to order. The girl that taught me my station had to come finish it or fix it or something before the night was over and the defeat that I felt was palpable, so she gave me a little pep talk as we smoked to tell me that she had a hard time with it at first.
Now that I have embarrassed myself, ill show you my version. I like to use cut up pork hops but you can make yours with any meat or meat substitute that you want. Alex likes rice with his lettuce wraps so that’s always my first move since the meat and vegetables all cook pretty quick. I use bib lettuce for the lettuce part, but you can use whatever lettuce you would like. I always add onion and whatever vegetable that are in the refrigerator to get these parents of mine to eat them and to make sure everyone gets as much as they want. The parents don’t appreciate the wrap part, so they do the meat and rice. Anyways once your meat and vegetables have cooked you need to add your sauce I use soy sauce a splash or two of rice vinegar and little bbq sauce for the thickness and corn starch to thicken it. Add Asian hot sauce if you want and enjoy.
